Fluffy Egg Muffins

Cook Time: 15 min.


  • 4pasture-raised organic eggs
  • 1Tbsp pure beef gelatin


  1. Preheat the oven to 400F.
  2. Separate the egg whites from the yolks, and beat the whites until stiff peaks form.
  3. Add the yolks and gelatin powder to the stiff egg whites and lightly mix/fold using a spatula.
  4. Add the mixture to a greased muffin tin (or pour into muffin cups) and bake for 10 minutes.
  5. Season with salt and optionally serve with avocado, kimchi, sauerkraut, or hot sauce.


Add butter while they are still hot, or cream cheese and spices if tolerated!
